It is thus impossible to delete them or change their permissions afterwards.

Hum... You mean when a doc has ACLs for Admin, and you're logged as staff member, you cannot edit it? Sounds legit, no?
In all cases, you can change it as an admin.
Maybe staff members should not create docs with Admin only ACls; but I'm not sure it's really a big issue.

No. I mean when a document has ACLs "Inaccessible" (visible = 0 in database).
It is then simply not listed in the management list anymore.

Ohhh. OK; thanks for details. I've opened a PR that should fix this, and I've added tests to check ACLs.
